Cut small
red, purple and yellow potatoes into 1-2 inch chunks, leave skins intact. Cook with
1/2 C water in a pressure cooker for 4 minutes or less.
Meanwhile, fry:
1/4 tea mustard seeds
2 shallots, thinly sliced
minced garlic
red pepper flakesWhen potatoes are done, remove from pot and add to the fried shallots.
Add and stir over heat:
1/4 tea turmericRight before serving, stir in
chopped cilantro leaves. Sprinkle with
salt and serve.
