Falafel Green Goddess Salad
This was a delicious and satisfying dinner salad that works with an elimination diet (no gluten, no nuts, vegan).
Make Vegan Green Goddess Dressing (variation of this recipe, check out her post for some other delicious vegan salad dressing ideas!). Blend the following until creamy- adding water as needed: 1/2 avocado 1/2 lemon, juiced 2 TB olive oil salt 1 clove garlic 1/4 cup parsley
Arrange salad on a plate: Chopped lettuce Cucumber, sliced into julienne "noodles" Alfalfa sprouts optional kalamata olives baked falafel green goddess dressing (above)
